Our Story

A tradition of
fire & craft since 1998

Ember & Oak was founded on a single belief: that a great steak is not cooked, it is composed. Every cut is dry-aged in-house for a minimum of 35 days, seared over binchotan charcoal, and finished with nothing but time, salt and patience.

Our dining room — all brass, walnut and low amber light — was designed to disappear around the meal, so nothing competes with what's on the plate.

"Fire has no patience for imperfection. My job is simply to listen to what the meat is telling me, and step aside."

"The best steak I have had outside of Chicago. The Tomahawk was cooked with a precision I didn't think possible."

James Whitfield — Food Critic

"Service so quiet and attentive you barely notice it — until you realise your glass was never empty."

Sophia Larsen — Regular Guest

"An anniversary dinner we'll talk about for years. The Chateaubriand carving at the table was theatre."
